Alexios Skourtis (PhD candidate) graduated from the Department of Animal Science & Aquaculture at the Agricultural University of Athens (2022) and obtained a MSc in Food Science & Technology from the Department of Food Science & Human Nutrition (2024). His PhD focuses on the bioconversion of CO₂ into acetate through acetogenic fermentation and its subsequent utilization for microbial protein production by yeasts and bacteria. His research interests include CO₂ valorization, sustainable microbial bioprocesses, and alternative protein production. He is also involved in the development of bio-based packaging systems, including edible coatings and active films for food shelf-life extension.
